Garlic has been used medicinally for centuries and has many proven health benefits, both raw and cooked. But for us, it's all about the flavour. Garlic has countless culinary uses but here are a few of our stand-out recipes.
- Pan Con Tomate is a gorgeous, simple Catalonian snack or starter. Toast some good bread, rub the toast on both sides with a raw clove of garlic, drizzle the bread with extra virgin olive oil, halve a ripe tomato and smear and squish it onto the toast. Sprinkle with a little flaky sea salt and devour. Absolutely delicious! Add a few fresh basil, thyme or oregano leaves if you want to go the extra mile.
- Whole roasted garlic is a revelation. Chuck a bulb of garlic, unpeeled, into your roasting dish whilst roasting potatoes or other vegetables. Then squeeze out the soft, golden roasted garlic purée. It's so good. Roasted garlic is sweeter and milder than raw or sautéed and it's stunning in loads of different dishes. Try adding it to your homemade hummus or whisking it into sauces, dressings or marinades. You can roast the bulb whole, or for ease of extraction, slice off the root end of the garlic before roasting - this way once the garlic is soft you can simply push it out of its skin by picking up the bulb from the stalk end and squeezing.
