Polenta is a thick slurry of corn semolina with which many traditional recipes are made in northern Italy. You can prepare it in many different ways. Hot and cold and for both sweet and savoury dishes. Polenta is gluten-free.

Here is the method of preparation of traditional basic polenta:
Use 350 ml of water or broth per 100 g polenta. Bring this to a boil and add the polenta while stirring. Leave approx. for 15 minutes while continuing to stir. Remove the pan from the heat and mix in Parmesan cheese and/or 1 egg, for example. You can also let it solidify afterwards and bake crispy on both sides with some olive oil.
