More than just a crudité for dipping, versatile celery can be braised, used to add flavour to sauces or shaved into salads. Celery is rich in vitamins and minerals. You'll enjoy vitamins A, K, and C, plus minerals like potassium and folate when you eat celery. It's also low in sodium. Plus, it's low on the glycemic index meaning it has a slow, steady effect on your blood sugar.
- Juiced! Celery juice is purported to have many health benefits, but apart from that it is absolutely delicious. Very refreshing especially when combined with cucumber, turmeric and black pepper.
- Waldorf salad! Combine chopped celery and apples with a homemade mayonnaise made with walnut oil and mustard. Serve with toasted walnuts and a peppery salad.
- Ants on a log! The classic way to eat celery raw. Fill a stick of celery with peanut butter or cream cheese and pop a few 'ants' in the form of raisins or olives along the 'log'. It's a fun and delicious way to eat celery and might help convince your kids to eat it too!
- Soup/stew base! Celery is an essential ingredient used as a base for many soups, stews, sauces and other slow cooked dishes. Slowly sauté a mix of finely diced celery, carrot, onion and garlic in a little olive oil with a pinch of salt. Celery brings that essential rounded, stocky, herbaceous flavour.
