Place the desired amount of dried shiitake in a heatproof bowl. 10 - 20 grams of dried mushrooms are equivalent to 100-200 grams of fresh ones. Pour at least 100 ml of boiling water into the bowl for every 10 grams of dried shiitake. The soaking takes about 30-60 minutes. If the cooked mushrooms still need to be cooked for the further process, 15 minutes is sufficient.
