Corn is originally from America. Sweet corn is a young consumption corn, the sugar in the grains of which has not yet been converted into starch. Fresh cobs can be kept in the refrigerator for a few days. Remove the bracts and threads before cooking. Do not overcook the corn. The longer cooked, the tougher the grains. Boiling for five minutes and letting it rest in the water for another ten minutes works better than boiling for 10 minutes. Not using salt during cooking also benefits the juiciness. Just before serving, brush the cobs with butter, sprinkle lightly with salt and bite the kernels off the cob.
