Fresh ginger contains powerful medicinal properties and is used as an anti-inflammatory and antioxidant. It's also spicy and delicious and a great ingredient to include regularly in your diet. There's no need to peel our organic ginger, but if you prefer to, the best way to avoid waste is to use the tip of a teaspoon. This way you can get into all the nooks and crannies easily. Another top tip to avoid wasting ginger is to store it in the freezer. Then simply grate it from frozen into your meals, hot drinks and smoothies.
- Blend into spice pastes along with onion, garlic, chilli, turmeric, black pepper and other spices to make fresh, delicious curries.
- Finely grate into salad dressings, dips or marinades. Try our favourite; ginger, lime juice, toasted sesame oil, soy sauce, maple syrup and chilli. Use as a dipping sauce, a salad/noodle dressing or a marinade for roasting vegetables or tofu. It's especially good with aubergine.
