The Ghiaroni family has been producing Parmesan hard cheese for three generations, and the fourth generation is ready to join. They are proud, in the Italian style, of the fact that the process is still the same as when they started in 1959. What many do not know is that Parmesan Hard Cheese is made from skimmed milk. This means that the cheese can be stored for years. The flavour is very intense and complex: robust and spicy due to the long maturation and at the same time spicy and full of character due to the use of rich, raw milk. Please note: this cheese is made from raw milk and therefore not suitable for pregnant women.
