Class I

Otherwise known as turnips or rutabagas, swedes are a humble but hardy root vegetable which grows well here in Ireland. With a beautiful purple to yellow ombre skin and buttery yellow flesh, these starchy roots are one of the most underappreciated vegetables we grow. They are sweet and slightly peppery, crisp when raw and buttery when cooked. Amongst other nutritional benefits, swedes are a fantastic source of fibre, calcium, iron, zinc, potassium, carotene and vitamins C, E, K and B6.

Recipe Ideas:

- Scrub and trim off the stalky top and any unwanted rooty bits. You can peel it with a potato peeler or small sharp knife or leave it unpeeled - the skin is perfectly edible and full of good fibre and nutrients.

- Chop into chunks or chips and roast with a little oil and seasoning as an alternative to potato. Or steam/boil and mash.

- Dice with mushrooms, onions and potatoes, season well and bake in a handheld shortcrust pastry to make this plant-based twist on classic Cornish Pasties.

- Thinly slice with a mandolin, food processor or large sharp knife, layer up in a baking dish with other root veg and bake with a little stock, cream or milk into a gratin.

- Simmer little chunks with curry spices, coconut milk and lentils for a seasonal red lentil dal.

- Grate and mix with a simple gram flour batter and fry into fritters.
