Lovely Organic Red Cabbage from Holland.
All cabbages are packed with nutrients - fibre, vitamins, minerals - but red cabbages, like most purple foods are especially high in the antioxidant anthocyanin. Adding this vibrant vegetable to your kitchen is a great way to diversify the colours of foods you consume. ‘Eating a rainbow’ of foods is important to get all the essential nutrients you need and this purple/blue tone is often forgotten. Red cabbages are an affordable and delicious addition to your diet.
- Eat it raw! Shred, mix with grated carrot and make into a vibrant slaw with a traditional mayonnaise dressing, a herby vinaigrette or our favourite - an Asian style dressing of sesame oil, soy sauce, lime juice and chopped red chillies.
- Ferment it! Shred, massage with salt, pack into a jar and turn this humble red cabbage into a hot pink sauerkraut. Have a look at our recipe here.
- Braise it! Cook it as a colourful side to your Sunday Roast with a splash of wine or apple juice, some chopped apple, seasoning and sweet spices.
- Roast it! This may seem unusual but roasted red cabbage is remarkable! Cut it into thick wedges or ‘steaks’ with the core attached, drizzle with oil and seasoning and roast until beautifully charred on the edges and soft and juicy in the middle. Switch up the seasoning to match your meal.
