Wash and spin the leaves dry, add chopped radishes, scallions, tomatoes, cucumber, red onion, olives... then dress simply with extra virgin olive oil and fresh lemon juice. Or make a classic vinaigrette by measuring 6 tbsp olive oil, 2 tbsp red wine vinegar, 2 tsp dijon mustard in a jar. Put the lid on and give the jar a good shake to emulsify. Keep the jar in the fridge for a week to add easy flavour to your salads.
