  • 1 onion, finely chopped
  • ¼ cup vegetable oil
  • 1 lb potatoes, peeled and cubed
  • ½ tsp cayenne pepper
  • ½ tsp turmeric
  • ½ tsp ground cumin
  • 2 tomatoes, chopped
  • Pinch salt / Black pepper


1. Lightly cook onion in oil until slightly brown and sweet. Stir in spices and cook for thirty seconds.

2. Add potatoes and cook for ten minutes stirring occasionally.

3. Add tomatoes, cover pan and cook until potatoes are soft, about ten minutes.

4. Season and serve.
