Red Peppers stuffed with Couscous
2 red peppers, halved and deseeded
1 cup couscous
Zest of 1 lemon
75g feta cheese, crumbled
1 handful coriander, chopped
1 orange, juiced
Salt / Pepper
A little olive oil
- Rub the peppers with oil, set open-side down on tray and grill until they are soft and skin peels off easily.
- Put the couscous in a bowl and just cover with boiling water. Cover and leave to swell for 5 minutes.
- Stir the lemon, feta cheese, coriander and orange juice into the couscous and season well. Fill the peppers with a couple of spoonfuls of couscous, drizzle over a little oil and serve with any remaining couscous.
