Ewelina’s One Pot Dish

"One day I woke up in terrible pain. It was unbearable and I knew something needed to change. I’d had enough - it was time that I looked after myself. I decided to start yoga because of this pain, it was the start of a process of healing, and it was a long journey but I started to see a miracle in my body and for me, healthy eating was the next step, it was just natural. I cleaned up my diet – cutting out the foods that were hurting my body and introducing the foods that would help me heal.
We have been ordering our vegetables from Green Earth Organics for almost four years now. I wasn't sure what to order at first, we went from getting a little box to ordering two to three boxes a week. Then one day, I forgot to order, so we went to the Farm Shop, and we started to get to know them, and it turned out Kenneth had transformed his life, he became our role model, because he ditched the corporate life to start a farm with his family.
Because I saw the small miracles in myself since eating this food, I thought, ‘Wow, it's really easy, you just need the tools to help you’. You don't have to change your life completely, you just need to find the alternatives, Green Earth Organics helped me find that. I always see people being sick around me, but I have really seen a transformation in myself since I started eating organic vegetables, and reconnecting with nature. I want to share my passion for this business, be that through ordering, cooking for friends, or through my food workshops. You grow stronger, faster, and better with this food, and the community grows with you.
When I receive my box in the morning, I take a moment and I look at it and think, ‘you are going to be me, you are what you eat’. I believe in the concept of pay the farmer now, and the Doctor later - I prefer to pay Kenneth as a farm owner first, some people might think organic is more expensive at first, I know that, but in the long term this is your savings, it's an investment in yourself."

Recipe: One Pot Dish
My favourite recipe to cook is a type of veggie stew/ curry, it is a one pot dish, which is easy to make and full of lovely ingredients from our vegetable box. I hope you enjoy it.
- Coconut milk
- Red lentils
- Chili flakes
- Garam masala blend
- Salt and Pepper
- First of all fry onion, fresh ginger and garlic in a pan
- Then add 2L of water and 200g of red lentils
- Next add the carrots and cook for 10 minutes
- After this add courgettes, tomatoes, kale and coconut milk, and cook as desired
- Finally add the following spices: cumin, salt, pepper, chilli flakes and garam masala blend.
- I like to serve this dish with bread or cooked potatoes.
