Congratulations to Joe Hyland who won this week's Recipe competition!  The featured ingredient was scallions and he made a lovely meatfree dish that is quick to prepare and very filling - perfect for a weekday dinner or weekend brunch.

RECIPE: Spanish Omelette with scallions

Spanish Omelette Recipe - made with organic eggs, scallions, and potatoes     Spanish Omelette Recipe - made with organic eggs, scallions, and potatoes and a sprinkle of paprika

 

Ingredients: 

Method:

  1. Slice the potatoes and fry with the olive oil on a medium heat.
  2. Turn after a few minutes and add the smoked paprika.
  3. Tear up the spinach and chop the garlic, reduce the heat and add to the pan between the potatoes.
  4. Slice the scallions and add to the pan.
  5. Beat 3 eggs, season with salt & pepper and add.
  6. Fry for a few minutes until firm, flip using a place over the pan and finish frying the other side.
